Hush Puppies-no wheat/gluten free

Ingredients
  • 2 cups Palmetto Farms corm meal
  • 1Tbsp. sugar
  • 2tsp. baking powder
  • 1tsp. salt
  • 1Tbsp. minced yellow onion
  • 1/4 Jalapeno pepper, seeded, minced
  • 1 Tbsp. chive, chopped dried
  • 1 egg, beaten
  • 1 cup milk
  • 2 cups oil for frying, peanut oil, canola oil, vegetable oil or corn oil)
Spicy honey drizzle
  • 2/3 cup honey
  • 2 Tbsp. fresh chili sauce such as Sambal
  • sea salt to taste
Honey butter Sauce
  • 3/4 cup butter
  • 1/4 cup honey
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon (optional)

Directions
  1. Mix dry ingredients together, Add milk, egg and onion, chive, jalapeno.
  2. Mix just enough to blend ingredients. The mix should be thick enough to hold its shape in the spoon.
  3. Drop by teaspoonful into hot oil (1.5"-2" deep in a small or medium sauce pan - about 350-360 degrees. Oil temp is important, use thermometer).
  4. Cook until evenly browned. It's best to cook in small batches, 8-10 at a time.
  5. Starting with a clean spoon, dip spoon in water each time before scooping hush puppy mix and dropping into oil. It will slide right off and make perfect puppies.
  6. Remove with a metal strainer on a paper toweled lined plate.
  7. Serve with your choice of sauce if desired.
Directions for Honey butter Sauce
  1. Mix butter with a hand mixer on medium until fluffy.
  2. Add honey and vanilla (and cinnamon if using).
  3. Mix until combined.
  4. Serve over toast, muffins or with hush puppies.
  5. Refrigerate up to 2 weeks.
