Kabocha Rice in Instant Pot




Kabocha squash is an excellent source of vitamin A and a good source of vitamin C. Kabocha squash also provides small amounts of iron, calcium, some B vitamins, potassium and magnesium.


Serve 4            Prep 10 minutes       Cook 25 minutes



Ingredients:



  • 1 Kabocha Squash, pelled and cubed ( about 4-5 cups), Keep them in freezer for the next time except  2 cups of cubed Kabocha Squash.
  • 2 cups short grain rice
  • 2 cups water
  • 1 Tbs Mirin
  • 1tsp + 1/2 tsp sea salt
  • 6 drops of Sesame Seed Oil


Directions:

  1. Add rice, water, Mirin, sea salt, and sesame seed oil in Instant Pot Pressure Cooker. Mix well, and add cubed Kabocha squash on the top of the rice.
  2. Lock lid onto the pressure cooker and select the High Pressure function or manual .   Cook rice for 7 minutes.
  3. Allow pressure to release naturally. Release any remaining pressure after 10 minutes.
  4. Remove the lid. Mix the Kabocha squash well with the rice and serve!
