Gondre Rice (Korean Wild Thistle Rice) Instant Pot


Serve  6-8  bibimbap


INGREDIENTS

Gondre Rice: 
  • 1 bag (150g~200g) of Dried Gondre (Korean Milk-Thistle) 
  • 5 cups Short grain rice /or Mixture with 4 cups short grain rice and 1 cup of Sweet Rice
  • 5 cups water (just a little less than 5 cups of water) 
  • 1/2 Tbs. Perilla Oil/or Sesame oil
  • 1 tsp. Guk-ganjang (Korean Soup Soy Sauce) /or a pinch of salt

Notes: Use same cup for rice, water, Boiled Gondre


If you use the rice measuring cup that came with the Instant Pot Pressure Cooker to measure the rice, remember to use the same measuring cup to measure the water as 1 rice measuring cup  (180 ml of rice)

Seasoning Sauce:
 

  • 4 T Soy sauce
  • 2 T water 
  • 1 T Sesame oil
  • 1 T Korean red pepper flakes (gochugaru)
    1 T Sesame seeds
    2 t Minced garlic
    2 t  Sugar / or Maesil Cheong (Plum Concentrate)
    3  Scallions, thinly sliced
  • 1 Serrano or jalapeno pepper, seeded, minced (optional)
  • 3T-4T Korean Wild Chives / Korean garlic chives, chopped (optional)


  • DIRECTIONS:

How to prepare dried Gondre:
  1. Soak the whole bag of dried Gondre overnight in a large mixing bowl of cold water.  Drain the Gondre after soaking and Place in strainer.
  2. Then place soaked Gondre into a medium pot, and pour the cold water until it submerged.
  3. Bring it to boil, Lower the heat to medium and continue to boil it for 30 minutes with lid on.   
  4. Turn the heat off, and leave in the cooking water until completely cooled and softened.
  5.  Drain and rinse under cold water. Then squeeze the water out of the leaves. 
  6. Divide them in each 1 cup (rice measuring cup)  portion and keep them in the freezer for the future use except for 1 cup.  
  7. Make rough chops and season the remained 1 portion of boiled Gondre with a drizzle of perilla oil and Soup-Soy Sauce or Salt. Then use your hands to toss and coat them evenly.
How to cook Gondre Rice in Instant Pot: 
  1. Rinse 5 cups of rice in cold water and scrub the wet rice with your hand. Rinse and drain until the drained water is pretty clear. Drain the rice through a strainer.
  2. Put the rice and  a little less than 5 cups  of water in a Instant Pot and soak for 30 minutes. 
  3. Placed the seasoned Gondre on top.  Lock lid and set the steam valve to “sealing” position. Set on manual for 5 minutes. When the timer goes off, let rice sit for 10 minutes, then quick release pressure.
  4. While the rice is cooking, mix all of the ingredients listed under "seasoning". 
  5. When your rice is finished, fluff rice with Wooden spoon, stirring Gondre through.   Serve with  seasoning sauce on the side.
  6. Add a few spoonfuls of the seasoning on top of the bowl of Gondre rice. Mix it up like bibimbap and enjoy!
