Kkaenip (perilla leaf) is a green leaf vegetable with a uniquely pleasant aroma and taste. It is high in iron content and rich in calcium, vitamins and minerals. This recipe is a quick and easy way to enjoy this delicious and nutritious vegetable.
Ingredients:
- 3 bunches of perilla leaves and stems
- 1 Tbsp. Perilla Seeds Oil
- 1 Tbsp, Perilla seeds powder
- 1 Tbsp Gochugaru, Korean hot pepper Flakes
- 1 Tbsp. Minced garlic
- 1/2 Tbsp~1Tbsp Soy sauce
- 1/2~1 tsp Tuna Sauce (cham-chee ack)
- 1 tsp Toasted sesame seed
- 1 tsp Sesame seed oil
- 1 green onion, thinly sliced (optional)
Directions:
- Cut off the thick parts of the stems and wash the perilla leaves and stems twice thoroughly under the tunning water. Put it in a colander to drain water.
- Make seasoning: Mix Perilla seeds oil, Perilla seeds powder, Gochugaru, garlic, soy sauce in a medium bowl, and mix the sauce ingredients together.
- Boil 8 cups of water in the medium pot. Blanch the perilla leave for about 2 minute with lid off, stirring often, so they turn greener in color and a little softer in texture.
- Strain the Perilla leaves and rinse in the cold water, and squeeze out the excessive water and cut into bite size.
- Add the cooled perilla leaves in the sauce, and really mix well with your hand so the sauce soak into the leaves.
- Add sesame seed, and sesame seeds oil, green onion into the mix.
