Easy Low Carb Tortillas

 


4-5 Tortillas           Prep 20 mins        Cook 5 mins

Ingredients

  • 1 cup Blanched Almond Flour
  • 1 Tbsp Xanthan Gum
  • 1/2 Tbsp Baking Powder
  • Pinch of Salt
  • 1 Large Egg
  • 1 Tbsp Water
Directions
  1. Add all ingredients to the food processor, and process until a ball of dough forms.
  2. Remove the dough from the processor and cover it with plastic wrap
  3. Knead it for 1~2 minutes with hands, and let it rest for about 15 minutes to help activate the xanthan gum.
  4. Unwrap the dough, and split it up into 4 equal-sized small balls of dough.
  5. Lay 2 sheets of parchment paper on the tortilla press, put the dough in between, and in the center of the press.
  6. Put the top of the press on top of the ball and place the level of the top and press down to flatten your tortilla.  If you want thin tortilla press down a couple of times.
  7. The dough should be about as thick as a penny, and at least 6 inches.
  8. Turn a non-stick pan to high, and get the pan hot.
  9. Cook the tortilla for 20-30 seconds, flip, 5 seconds and repeat - DO NOT overcook
