Peruvian Lomo Saltado





Serve 4        Prep 10 mins           Cook 30 mins

Ingredients:

  • 1 lb Shaved Beef Steak (from Trader Joe) or sirloin steak, cut into 2-3 inches length
  • kosher salt,and pepper to taste
  • 1/2 tsp cumin
  • 2 teaspoon avocado oil
  • 1 medium red onion, sliced into thick strips
  • 1 large green pepper, cut into strips
  • 1 large jalapeno, ribbed and seeded, thinly sliced
  • 4-5 cloves garlic, crushed
  • 1-2 medium tomato, sliced into wedges
  • 3 tbsp low sodium soy sauce, use tamari for gluten free and coconut aminos for whole30
  • 2 tbsp apple cider vinegar
  • 1/2 cup chopped cilantro
  • 2 handful Frozen fries

Directions
  1. Preheat the oven to 400 degree F. Season the frozen fries with garlic powder, then cook the fries to the package instruction
  2. Meanwhile, season meat with salt, pepper and cumin. Set aside. Prep the vegetables.
  3. Heat a large wok over high heat.   When hot add the oil and the meat, cook about 2 minutes, until the meat is cooked.   Add the onion, bell pepper, jalapeno and garlic and stir fry for 2 minutes.
  4. Add the tomato, soy sauce and vinegar and cook 1-2 more minutes.
  5. Season with more salt or coconut aminos as needed, remove from heat and finish with cilantro.
  6. Serve immediately with french fries.
