Instant Pot Salmon and Yellow rice. Loaded with garlic, butter, lemon and flavor with tender, flakey and perfect salmon!
Pot-in-pot cooking, sometimes referred to as PIP cooking, is a technique that allows you to cook multiple dishes in the Instant Pot at the same time, such as a main course and a side dish.

Ingredients
- Three 5 to 6 oz. center cut salmon Filet
- 1 Tbsp lemon and pepper flakes
- 1 Tbsp fresh dill (1 tsp dried dill)
- 1 Tbsp fresh parsley, plus more for garnish
- 1/4 cup Lemon Juice
- 1 lemon, thinly sliced
- 3 Tbsp Butter (divided into 3 pats for Instant Pot), plus 1 Tbsp butter for rice
- 1.5 Tbsp garlic (minced)
- Salt to taste
- Red Pepper Flakes (optional)
- 1 cup yellow rice mix
- 2 cups plus 1 cup water
- Olive Oil spray
Directions
- Place 1 cup of yellow rice mix with 2 cups of water in a bottom pan, add 1 Tbsp unsalted butter, set aside.
- In a small bowl mix lemon juice, garlic, dill, parsley, set aside. Clean and pat dry salmon.
- Place 6 lemon slices at the bottom of the top pan, then place salmon in the pan.
- Spray Olive Oil on the top of the salmon, then sprinkle salt, lemon and pepper to taste on top of the salmon.
- Add 1 Tbsp of lemon juice mixture over the salmon (repeat for each salmon piece).
- OPTIONAL- sprinkle each piece with red pepper flakes.
- Place one tablespoon of butter on top of the salmon (repeat for each salmon piece).
- Stack up the pan, and tightly close up to ensure no steam can escape.
- Add 1 cup of water to the bottom of the Instant Pot and place PIP.
- Close the Instant Pot and make sure the valve is set to sealed.
- Pressure Cook at High Pressure for 10 minutes, then Natural Release for 10 minutes.
- When the time is up, quickly turn venting knob to venting position to release the remaining pressure. Open the lid quickly.
- Remove PIP and carefully open to release the steam and stop cooking.
- Fluff perfectly cooked rice with fork. Then, serve rice with salmon on plate.
