Chicken Tortilla Soup - Instant Pot

Ingredients


Chicken Tortilla Soup
  • 1 tablespoon oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 - 2 jalapenos, diced
  • 4-1/2 cups low sodium chicken broth
  • 3 boneless, skinless chicken breasts 
  • 3 Tablespoons Homemade Taco Seasoning or 1 packet of Store bought taco seasoning.
  • salt and pepper to taste
  • 1 (14.5-ounce) can fire-roasted tomatoes
  • 1 cup red salsa
  • 2 tablespoons adobo sauce from can chipotle chilies in adobo sauce 
  • 1 - 2 chipotle chilies from can
Toppings

  • 4 Tablespoons Sour Cream or Mexican Crema
  • 4 Tablespoons shredded Asadero or Monterey Jack Cheese, Mexican Cheese
  • 1 avocado, sliced
  • 1 jalapenos, sliced
  • 1 cup cilantro, chopped
  • 3 green onion, sliced
  • 4 Tablespoons home made crispy Tortilla Strips or store bought Tortilla Strips - Tri Color tortilla strips

Instructions


  1. Press the SAUTE Button on the front of the Instant Pot. Select More to ensure the Instant Pot gets hot enough. Add 1 tablespoon of oil.
  2. When the oil is hot, add the chopped onions and stir. Cook for about 3 minutes, then add the minced garlic, chopped jalapenos, and stir for about 1 minute.
  3. Add the chicken broth, chicken, taco seasoning , fire-roasted diced tomatoes, red salsa.
  4. Add 1 or two chipotle peppers plus 2 tablespoons of adobe sauce for added smoky flavor.
  5. Replace lid on the instant pot and set the valve to sealing. Press the MANUAL button, then set it to pressure cook on HIGH PRESSURE for 10 minutes. 
  6. After the Chicken Tortilla Soup has finished pressure cooking, do a NATURAL RELEASE, for 10 minutes, then QUICK RELEASE by moving the pressure release valve to the VENTING position so it will let the remaining steam vent.
  7. After the pressure has been released and the pin has dropped, carefully remove the lid. Using 2 forks shred chicken. Then stir in chopped cilantro.   At this point the soup is ready to serve with your favorite toppings.
NOTE:

How To Make Crispy Tortilla Strips. 
Cut corn tortillas into strips and place in one layer on a foil-covered sheet pan. Bake for about 7 minutes in a preheated 350 degree oven.

How to Make Taco Seasoning. 
Mix all the ingredients together in a small bowl.

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
  • 1/4 teaspoon cayenne or crushed red pepper
