Kabocha squash is an excellent source of vitamin A and a good source of vitamin C. Kabocha squash also provides small amounts of iron, calcium, some B vitamins, potassium and magnesium.
Serve 4 Prep 10 minutes Cook 25 minutes
Ingredients:
- 1 Kabocha Squash, pelled and cubed ( about 4-5 cups), Keep them in freezer for the next time except 2 cups of cubed Kabocha Squash.
- 2 cups short grain rice
- 2 cups water
- 1 Tbs Mirin
- 1tsp + 1/2 tsp sea salt
- 6 drops of Sesame Seed Oil
Directions:
- Add rice, water, Mirin, sea salt, and sesame seed oil in Instant Pot Pressure Cooker. Mix well, and add cubed Kabocha squash on the top of the rice.
- Lock lid onto the pressure cooker and select the High Pressure function or manual . Cook rice for 7 minutes.
- Allow pressure to release naturally. Release any remaining pressure after 10 minutes.
- Remove the lid. Mix the Kabocha squash well with the rice and serve!
